Yellow Raspberry

Everyone is certainly familiar with the red raspberry. However, very few people realise that yellow raspberries also exist. Compared to their red counterparts, yellow raspberries taste much sweeter and have a flavour reminiscent of papaya, yellow kiwi, honeydew melon and pineapple. On the nose, the yellow raspberry is a little more restrained, less pungent than the red one, but its full, very special flavour is beguiling.

Fräulein Brösel grew up with the yellow raspberry back in Burgenland, Austria, and always found it much more interesting in flavour than its red counterpart. Unfortunately, the yellow raspberry has almost fallen into oblivion, so we felt it was our mission to help it become better known again and to revive this variety. In 2020, we found a farmer who cultivated this rare berry variety for us and in 2022, after 2 years of ripening, it was harvested for the first time.

The spirit production process takes place, we macerate the yellow raspberries in neutral alcohol for several months and distil the mixture.

The alcohol content is 40%, but the spirit is by no means sharp, as we reduce the sharpness through the long storage after the distillation process.

We only use the pure fruit, no artificial flavourings or colourings.
